2 cups flour
1/2 tsp. baking powder
1 tsp. soda
1 tsp. salt
1/2 c. shortening or margarine
3/4 c. sugar
2 eggs beaten
6 T. buttermilk or sour milk
1 tsp. vanilla
1 c. mashed very overripe bananas
1/2 c. chopped walnuts (opt.)
sift flour with soda, salt and baking powder.
Cream shortening or margarine with the sugar until light.
Add the beaten eggs, buttermilk, bananas and vanilla.
Beat until smooth and add the dry ingredients blend until smooth and fold in nuts.
pour into well greased loaf pan and bake at 350 dergrees 45-50 min.
I double this and it makes 2 reg. size loaves or 3 med. size loaves.
I use very ripe bananas, which you can freeze in the skins or mashed and put into a freezer bag,to save for later.
